Wanna try my vegan Papaya Lumpia recipe?

For me food is the big obsession of my life. So here's one of my favourite easy but healthy Pinoy appetizer and merienda recipe.

Vegan Papaya Lumpia

½ cup fried tokwa (firm tofu), sliced to small pieces
2 cloves garlic, crushed and roughly chopped
1 small onion, chopped
¼ cup vegetable stock
3 cup green papaya, shredded
¼ cup sweet potato, cubed
Salt and crushed peppercorns, to taste
Vegetable oil
Lumpia wrapper (spring roll sheets)

For The Dipping Sauce::
1½ cup water
¼ cup cornstarch
¼ cup brown sugar
½ cup soy sauce
  • Heat 2 tablespoon vegetable oil and sauté onions, garlic and tokwa. Sauté for 2 minutes. Stir in the stock.
  • Add papaya and sweet potatoes and cook until tender.
  • Season with salt and crushed peppercorns. Remove from heat and allow to cool.
  • Spread out the lumpia wrapper, place a heaping teaspoonful of mixture in the middle, fold the end over the filling, roll to form a cylinder and stick, closed with a very small amount of water.
  • Fry the lumpia in vegetable oil over low heat until crisp and golden brown, drain.
  • For the dipping sauce: Mix all ingredients and boil until thick, stirring constantly to prevent scorching. There you go your green papaya spring rolls is ready! Enjoy!
  • Garnish with cucumber.
  • Serve with prepared sauce.
  • Makes 6 servings
