Wanna try my vegan Pancit Bihon Guisado recipe?

For me food is the big obsession of my life. So here's one of my favourite healthy Filipino meals recipe.

Vegan Pancit Bihon Guisado

Vegan Pancit Bihon Guisado 500 gram rice stick noodles (bihon)
½ cup mock chicken strips
1 small cabbage, shredded
1 medium carrot, julienned
1 cup mange tout
1 celery stalk, sliced thinly
3 cloves garlic, crushed and roughly chopped
1 large onion, finely chopped
4 Tbsp vegetable oil
½ cup soy sauce
2 cup vegetable broth
Salt and pepper to taste
  • Put the rice stick noodles in a clean basin and soak in water to soften.
  • In a wok or large frying pan, heat the vegetable oil and sauté the onion and garlic until fragrant.
  • Add the mock chicken and vegetables and continue stir frying until the vegetables are half cooked.
  • Add 1 cup of the vegetable broth and soy sauce and simmer for about 1 minute.
  • Remove half of the ingredients from the wok and set aside as topping for the noodles later.
  • Remove the noodles from the soaking water and add to the ingredients remaining in the wok.
  • Stir constantly until the noodles are cooked and dried.
  • If it becomes dry before the noodles are cooked, you can add the remaining broth as needed.
  • Season with salt and pepper to taste.
  • Arrange the cooked noodles in a big platter and put the topping. Enjoy your masarap (delicious) na cruelty-free pancit bihon!
  • Garnish with coriander.
  • Serve with slices of calamansi or lime or lemon.
  • Makes 3 servings
