Wanna try my vegan Mechado recipe?

For me food is the big obsession of my life. So here's one of my favourite meatless Filipino dish recipes.

Vegan Mechado

Vegan Mechado Mock beef or any vegan meat, cut into cubes
2 medium potato, quartered
1 medium carrot, cubed
1 large red pepper
2 tomato, chopped
½ cup tomato paste or sauce
1 large onion, sliced
2 cloves of garlic, crushed and roughly chopped
2 cup vegetable broth or water
3 bay leaves
¼ cup coconut oil
¼ cup soy sauce
Juice of half of lemon or 2 Tbsp calamansi juice
Lemon zest
Salt and ground black pepper to taste
  • Fry the mock beef until the colour turns light brown. Remove the mock beef and set aside.
  • Sauté the garlic, onion and tomatoes.
  • Add the tomato paste and and potatoes, sauté. Add vegetable broth and laurel leaves then simmer for 5 minutes. Add water if needed.
  • Add the carrots, soy sauce, ground black pepper, lemon zest and lemon juice then simmer until vegetables are tender.
  • Add the mock beef and red pepper and cook for 2 more minutes. Enjoy your masarap (delicious) na cruelty-free mechado!
  • Garnish with coriander or crushed fresh black pepercorns.
  • Serve with steamed rice and atchar.
  • Makes 2 servings
