Being a vegan is a very challenging life style. Every day of your life is full of challenges and new adventures - looking for dining out options that can serve you dairy-free food, shopping for free cruelty toiletries and clothes, and buying ingredients for your kitchen cupboards as well. I hope this website can give you enough strength to continue to save our environment and to fight for animal rights.

Ginataang Papaya

2 Tbsp oil
1½ cup coconut milk
½ cup coconut cream
8-10 cloves of garlic, crushed and roughly chopped
½ cup ginger, sliced
1 tsp black peppercorns
1 medium green papaya, thinly sliced
3 red chillies, sliced
2 Tbsp vegan fish sauce
Salt to taste
  • In a pan heat cooking oil and sauté garlic, add the ginger and peppercorns, sauté until fragrance. Add the papaya in the pan.
  • Add the coconut milk, vegan fish sauce and chillies, cover and simmer 10 to 15 minutes or until papaya turns transparent. Add coconut cream and simmer 5 minutes more. Add salt if needed.
  • May serves already at this point unless you want it of thicker consistency, in which case, let it simmer on low heat until of desired consistency.
  • Garnish with bay leaf and crushed peppercorn.
  • Serve with steam rice.
  • Makes 2 servings.
