Wanna try my vegan Ginataang Papaya recipe?
Being a vegan is a very challenging life style. 2 Tbsp oil
1½ cup coconut milk
½ cup coconut cream
8-10 cloves of garlic, crushed and roughly chopped
½ cup ginger, sliced
1 tsp black peppercorns
1 medium green papaya, thinly sliced
3 red chillies, sliced
2 Tbsp vegan fish sauce
Salt to taste
- In a pan heat cooking oil and sauté garlic, add the ginger and peppercorns, sauté until fragrance. Add the papaya in the pan.
- Add the coconut milk, vegan fish sauce and chillies, cover and simmer 10 to 15 minutes or until papaya turns transparent. Add coconut cream and simmer 5 minutes more. Add salt if needed.
- May serves already at this point unless you want it of thicker consistency, in which case, let it simmer on low heat until of desired consistency.
- Garnish with bay leaf and crushed peppercorn.
- Serve with steam rice.
- Makes 2 servings.
